My winter break is here so it’s time to try something new! We were once gifted pineapple jalapeño jam and really enjoyed it.
Thank you for reading this post, don't forget to subscribe!When pineapple went on sale I decided it was time to try and make my own. I had jalapeños in the freezer from this summer ready to be used. Our jalapeño plants did very well this year and we had an endless supply of them. I did my best to stay on top of doing something with them.
Next, year one of my goals is to do a better job of harvesting sooner so the plant will continue to produce even more. Knowing that freezing for later has worked well for us. I will be doing more of that.
I actually ended up freezing the fresh pineapple as well. It was on sale over Thanksgiving so adding that to my already long todo list wasn’t an option. Now that my Christmas break is here it’s time to get going. We also wanted to give it away as gifts to our families. I now wish I would have bought more pineapple. Our kids are enjoying it semi-frozen as a snack.
New Gadget
I bought a new toop to cut and core my pineapple more efficiently for future use. I will definitely share my thoughts on it once I have actually tried it out! This time, I just used a knife to cut it up. Now I have a good reason to buy more pineapple to test it out, don’t I!
The first batch I made didn’t turn out quite right; nothing setup as it was supposed to. I am pretty sure I didn’t let it get to a rolling boil for a long enough period of time for the sugar to completely disolve like it needs to. So, I opened all the jars, added it to another batch I was working on and started over. The second time I made sure to boil it for a longer period.
Sure enough, there was no issues the second time it setup beautifully and it tasted fantastic. One thing I have learned through this process is that mistakes are inevitable, and you have to take them in stride and be willing to learn from them.
Now I just need to add it to my Christmas baskets for gifts! There’s nothing like waiting until the last minute to include one more thing. Christmas baskets are on their way! Keep an eye out for my post.
Hopefully our families will enjoy our labor of love gifts! I certainly enjoyed making and spending my time creating different foods to share with them.

Through Christ, believers are offered salvation and the restoration of their relationship with God. This is the ultimate gift for all those who believe. Christ invites us to receive everlasting life through faith.
