The love of Pickles and Canning

My family loves pickles! I personally don’t but I enjoy making something that I know my family will enjoy. There is a satisfaction in preserving food that will make my family happy. It also helps the grocery bill. This year we have been making dill, kosher dill, and bread and butter. One year we made spicy pickles, and our entire house smelled of hot pickles! You could almost taste it in the air as the mix was coming to a boil. We enjoy spicy things in moderation, but that was personally too much. One thing that we have learned is to add xtra crunch to our pickles before processing them in a water bath.

My husband wants to try and make cinnamon pickles, but that will be for another day. Do you have a favorite recipe to use when pickling? I have found we love to use Mrs. Wages pickle mixes. They always seem to turn out just right when we use the mixes.

Process

What is your process for canning?

  1. Make sure jars are sterilized and lids and rings are ready to go
  2. Pick our cucumbers and wash them up
  3. Start heating water for the water bath
  4. Make mix according to directions on Mrs. Wages package
  5. Cut them into slices or spires of your desired thickness
  6. Start warming up jars and lids
  7. Packing warm/hot jars
  8. Pouring mix in jars and then adding xtra crunch
  9. Placing lids on and making rings finger tight
  10. placing in water bath for the time stated on the package
  11. take out and of water bath once the time is up
  12. Store as directed

Cucumbers

It also has been a great year for cucumbers, those I do love to eat fresh from the garden. All of us love eating fresh from the garden cucumbers. These last few days they have just exploded with growth. I’ve been picking 10 or more every day which means that we will be eating them for lunch, snack, and dinner in addition to making another batch of pickles.
